GRAPE VARIETY: 100% Trasimeno Gamay.
VINEYARD: from associated producers located on the hills of Castiglione del Lago, Paciano and Panicale.
SOIL: sedimentary formation. Sandy clayey to sandy soil texture; sometimes with clayey outcrops. Altitude: 300/350 a.s.l.
HARVEST PERIOD: from 15 October the grapes are harvested slightly overripe to facilitate the solubilisation of the extractive substances.
PRODUCTION PER HECTARE: Grapes: 4000/4500 kg/ha. Wine: 25/30 hl/ha.
AGEING: About 12 months in large oak barrels.
BOTTLING: starting from February two years after the harvest.
AGING: 7 months in the bottle.
AVERAGE ANNUAL PRODUCTION: around 30,000 bottles.
VINIFICATION: Pressing: the destemmed and crushed grapes are fermented. The contact between the skins and the must lasts for about 20 days. Racked off it is kept in tanks in temperate rooms in order to favor the malolactic fermentation. Alcoholic fermentation: at a temperature not exceeding 30°C in order to maintain the typical characteristics of the vine unaltered.
PRODUCER'S RECOMMENDATIONS: Pairings: excellent with grilled red meats and roasted feathered and furred game. Service notes: serve at a temperature of 18°C in an important red glass.
